Chicken and eggs aren't great for me either; I can only eat a very small amount of chicken and only hard-boiled or poached eggs, never scrambled. If I were you, I'd try some tender cuts of beef and just make sure to take very small bites and chew them really well. If your sleeve isn't ready for beef, that's pretty much the only way to find out.
My program had us wait until 3 months post op to add red meats. I know a lot of programs don't require this long a wait.
