What are your favorite recipes for freezing? I need some inspiration.

I love making mini meatloves in muffin cups and then just microwaving them when I want something hot for lunch. YUM. Right now that's my go-to freezer luch.

I make mini crustless quiche ( usually bacon or ham with onions and cheddar) in muffin tins. I freeze them on a cookie sheet and then dump them all together in a freezer bag. They go from freezer to microwave in a few minutes. Great if you're in a hurry. They're pretty firm, so you can wrap them up in a piece of waxed paper and run out the door.

No chocolate involved. They are in the shape of brownies and delicious.
Here's a recipe, but it's not completely what I use.
I modified mine and add bacon (well, because you need a PROTEIN) and I use feta instead of mozzarella. I also add roasted red peppers.
I cut them up into little squares and freeze them. I think when I input the recipe into MFP it came out as 150 calories per square.

Yes, I use flour for this recipe. I don't eat flour regularly, and it's more for a binder for these brownies along with the milk, which I don't normally drink.
I buy two huge bags of spinach from Costco to increase the bulk. Here's my recipe pulled from MFP:
10 Ingredients
- 10 oz. (28 g/about cube), Feta Crumbled All Natural
- 1 container (18 slices skillet cooked slices ea.), Hickory Smoked Bacon
- 4 oz., Roasted Red Pepper
- 1 stick, Butter - Salted
- 1 cup, 28 grams, Shredded Mexican Style Cheese
- 1 Cup, Yellow Onion
- 6 cloves, Garlic - Raw
- 1 cup, Whole Milk
- 1 cup (30g), All-purpose Unbleached White Flour
- 2 container (40 cups ea.), Fresh Spinach

I like this - I would prob reduce the flour by 1/4 to 1/2 and have a more solid brownie - but I usually like this sort of thing. Thanks.
