Ah, but no crackers or crunchy veggies to go with it. I don't think I'll ever eat crackers again (if I'm not suicidal, that is), and I'm not ready for crunchy veggies yet!

A soft food I tend to eat is mashed potatoes! Just a bit, not too much, because its texture is quite dense...

Ah, mashed potatoes and I used to be very close... But we had to break up because they were running my life. Thanks for the fond memories, though! :)

No more mashed potatoes for me.  That's tough for an Irish girl  

But I have found a wonderful substitute in mashed cauliflower.  Same consistency and I flavor it with lots of garlic.  Much better stats and far fewer carbs than potatoes.

Cauliflower has been consumed in Europe since about 1300 AD. The potato didn't arrive in Ireland from its native South America until 1600 AD. Cauliflower wins! The ancestors can rest peacefully.
