Homemade Yogurt: What to do with that whey

I just started making homemade yogurt again, but this time using my Instant Pot pressure cooker. Awesome! I can use a gallon of milk now, and the IP makes the process crazy easy. But that also means I now have a lot of whey every week, and it is a shame to throw out all that good protein. I had forgotten until I saw a post on the IP forum, that you can turn the whey very easily into ricotta. Bring it to a boil. Turn off the heat. Don't stir. Let it cool down then strain. The ricotta clumps, and you strain of the whey in the same manner as you strain yogurt. Nice!

I so need to try this.

 

Question: Any idea how much protein is in that whey liquid? I make whole wheat pita bread each week and subbing in whey for the water would be a nice use for it, but I've no idea how to calculate the amount of protein that would add to the recipe.

No idea. I was thinking about using it to soak my beans, but ran into the same unknown amount of calories/protein.

Most of the protein stays with the dairy solids which is why greek yogurt is so high in it.  It's still there, but its not a huge amount, probably.

I follow a ketogenic diet post-op. I also have a diagnosis of binge eating disorder. Feel free to ask me about either!

Happyteacher you are like a IP crack dealer!  I no sooner got done reading this post then I flipped over to FB and there a friend had JUST posted a picture of her IP!  They made mac and cheese for dinner and were now making yogurt.  Everywhere I turn, there is an IP poking me to buy it!!!  I may have to give in.....
