Rice Paper or wonton wrappers

I have a potluck at work next week for the holiday party and I was looking for something I could bring but had some eye appeal to it.  I found a recipe for fresh shrimp spring rolls.  They are rolled in rice wrappers and are stuffed with veggies (and noodles that I wouldn't use). But when I started to research it, one rice wrapper has about:  

Calories - 20

Total fat - 0.07g

Cholesterol - 0mg

Sodium- 19mg

Potassium- 4mg

Total Carbs - 4.35g

Protein - 0.3g


Would you eat these?A site I found suggested substitutes for rice wrappers (leaves and thin sliced veggies) but I just liked the visual of the rice paper.  They even suggested wonton wrappers as having less calories.

The nutrition facts are not displaying for me properly. But regardless, I don't do grains, so no, I would not eat them.

I would, but I'd only eat one. 4.35 grams of carbs isn't terrible in my opinion.

I love spring rolls and would definitely eat one.

What about deviled eggs? or bacon wrapped shrimp? or bacon wrapped blue cheese stuffed dates? antipasti skewers (toothpick with artichoke, mozzarella ball, tomato, basil, piece of pepperoni).

All of these have visual appeal and don't have carbs...

I may be in the minority of EVERYONE but I don't like bacon !!!!  Antipasti skewers are a good idea but I brought those last time.... I also thought about some baked shrimp (saw Ina Gartner make them yesterday and they looked good).

Another easy potluck option is meatballs. and since you are so early out from surgery, you would be able to eat one or two.

Here's my suggestion:

Plan your food intake accordingly for the day ahead of time. Include 1 or 2 spring rolls in that plan. If it fits your macros - IIFYM (which is a popular method of eating, btw...) for the day and you are okay with that inclusion, go for it. 

Will eating these spring rolls be a trigger for  you? Will there be other things at the pot luck for which you need some flexibility? If you can think through the event, you will be better able to answer what will work for you. I know for me, I always have to go to these "free food" events without any hunger. That one strategy, even with my small stomach, helps me stay in control and calm at events like a pot luck.
