As long as you get the full-fat versions (and why wouldn't you?), most cheese will be pretty low in carbs. Cheese is like, my favorite food group. I probably eat some every day.

Any cheese (brie, blue, cheddar, goat,  etc.) and no crackers. I eat as few carbs as possible.

I eat pepper jack cheese sticks when I need a snack.  I think they're about 80 calories which is within my range.

I live off of cheese. I don't eat crackers with it. Sometimes I will have pork rinds but I will eat cheese all by itself. My favorite at the moment is Gruyere, but mild cheddar is my good old standby.

IMO, full-fat cheese is too high in calories for its marginal nutritional benefits. Low-fat cheese is not worth eating either because it tastes like crap and has virtually no nutritional benefits. Same goes for milk and yogurt (although yogurt is helpful during the healing phase after surgery). The trade-off of calories vs. nutrition makes dairy products something to be avoided.

If you can't live without pepperjack, have 2 ounces once a week as a special treat for lunch. But absolutely no crackers of ANY kind!

Again, this is my own opinion and my own experience. The few times I've had cheese, I couldn't believe how quickly my calorie count shot up.
