In September, I'm going to be a full time student for the first time in 18 years.  Eek!  Due to scheduling, this means that every Tuesday is going to need to be a slow cooker dinner day.

What are your favorite slow cooker recipes?  Please share links or recipes if you've got them!

Woo, good luck Gwen!  That's amazing! :D

I made this with lettuce wraps instead of bread pre-surgery (I was on a low carb diet forever).  It's so good.

I follow a ketogenic diet post-op. I also have a diagnosis of binge eating disorder. Feel free to ask me about either!

Congratulations and enjoy your new amazing journey.  I am 48 and a full time graduate student.  I am now going into my last of a 5 year full time program.  I will be graduating in May.

When I started 4 years ago, it was my first time as a student since I graduated college 23 years earlier.

I felt both very young and very old at the same time.  Young because it was all so new and fresh and exciting.  Old because I was now in class with kids my daughter's age.  All in all it has been an incredible experience.  As an adult, I feel I was and am in a mature enough position to really suck the marrow out of my educational opportunities.

I wish you all the best!!!

My favourite slow cooker recipe it so easy!

Place 4 frozen chicken breasts in your crock pot.

Sprinkle them with 1/2 pack of taco seasoning

Dump 1 large bottle of also overtop

Cook on low for 6-8 hours

When cooked shred the chicken in the pot

I serve it over rice or in wraps/tacos to my family and either serve it on its own or over lettuce for me. I top with a tbsp of sour cream, a sprinkle of cheese and fresh chopped tomatoes and green onions.

This is by far our favorite recipe, too!

We use a jar of tostitos salsa in medium.  I've only been sleeved two months, and spicy foods don't sit well with me.  (And I NEVER considered this a spicy dish but now I'm a bit shy....)  I plan to try it again for the first tim post-op next week.

Congratulations & good luck! Exciting changes!

Here is a link to a cookbook I just downloaded from Kindle Unlimited. 2.99 without KU, but may be worth the cost.

Easy crockpot pulled pork -Put a hunk of pork (or beef) in the crock pot,  pour sugar free root beer over it, set on low to cook overnight, reset on low again in the morning to cook all day, then drain all the liquid,  shred with forks and add sugar free barbecue sauce.
