The Great Banana Omelet, as it has come to be called, is a concoction I came up with when I was using up some slightly overripe bananas. You slice a small banana or half of a large banana into a small frypan that has a bit (1/2 tsp.) of butter warming in it. Let the banana slices cook for about 3-4 minutes over medium heat (slices are about 1/3 to 1/2 inch thick). Then add 2 beaten eggs and cook them up like scrambled eggs. Lots of protein with just a bit of sweetness and flavor from the banana. You can add a bit of cinnamon or nutmeg if you want; I prefer the pure banana flavor. I know a lot of sleevers believe fruit is "da Debbil," but I think a bit of fruit and fresh vegs with every meal is essential for good health. Just sayin' is all.
