What are your favorite vegetables?

Broccoli is my favorite, but it took a while until it would settle in my stomach. I had an easy time with cauliflower early on, though, especially when you cook it until it's falling apart and ma**** up to a creamy consistency.

ZZZZZucchini!! Why? Because our zucchini plants are going nuts at the moment and we have it coming out our ears!

I've been really lucky with veggies. I tend to use zucchini (for noodles), cabbage, baby bok choy, onions, mushrooms (for stir fry), romaine lettuce, red cabbage, tomatoes (for salads) and celery & carrots (for snacks). I also like spinach, broccoli, cauliflower, string beans & corn (which I limit).
I would have to say that the easiest to digest would be the zucchini, the stir fry, spinach, & cauliflower. I think that may have something to do with the way they're cooked.
I have IBS so vegetables have never been my friend. If they're well cooked or fermented, it's not as much of a problem. I still love them but have to go easy on them--nothing has changed from before surgery (except that I had total relief of my IBS symptoms when I was in a post-op phase and not eating vegetables!).
I eat a lot of wilted greens like spinach, chard, kale, etc. I've had roasted brussels sprouts and broccoli, as well as sauteed peppers and onions. Raw stuff like celery and lettuce don't sit well yet, and steamed baby carrots were pretty 'heavy' too.
I tried a bite of potato the other night and got a major case of the slimies, but sweet potato/yam doesn't bother me, go figure. I don't mind not being able to tolerate potatoes, that just reinforces the decision to not incorporate them into my diet when I reach maintenance.
