Recipes for "getting back on track"
Hi All,
Recently, I decided to “get back on track” with my plan after gaining a few pounds on the scale. I realized I have a lot of good recipes that are healthy, high protein, low cal, low carb and perfect for getting back on track. I decided to post them on the recipe board, and I wanted to start a thread here for others to share their favorite recipes that they use to “get back on track.”

Hi, PB2 is basically peanut flour that can be mixed with water to make peanut butter but without the fat. It has a good peanut flavor, and is lower calorie. You can buy it on amazon.com. I suspect larger food stores would carry it. Trader Joe's used to carry their own brand, but I can't find it there anymore.

FWIW, when I need to get "back on track", I don't use ANY recipes at all. I focus on simple, protein forward foods with just one or two ingredients. It is great from a health standpoint (VERY "clean" eating) and has the psychological advantage of helping me focus on the main ingredients. It is also very easy to track the nutritional info for if you ae doing that... No guessing how many calories, etc.)
Two of my favorites, for example:
1) Marinate skinless, boneless chicken breasts/strips in RF Italian dressing for several hours and then put them on the grill; serve with some steamed green beans (or broccoli or whatever veggie of choice). Yum! One of my favorite meals of all times.
2) Take a piece of your favorite white fish (or even shrimp, if you don't like fish... I usually use cod, halibut, or shrimp), sprinkle with pepper and lemon juice on both sides, add some green beans to it, and steam/bake it in the oven (either by wrapping in foil or in a covered dish).
Sometimes I do 4 or 5 ingredient dishes, but those also require no recipe (e.g., a tortilla-less burrito... just cook up some ground beef (optional), and layer the beef, RF refried beans, and some cheese and heat it in the microwave. Then top with diced tomatoes, green onions, a few black olives, and/or some jalapeño peppers. You can also a little plain Greek yogurt in lieu of sour cream.
