One of the cardinal rules: "You don't get fat eating fat"
If you eat good quality fats you're doing fine (nuts, salmon, olive oils, google for more ideas). The more you eat the better because you get better satiety from them.
What you should fear are the sugar and grain based carbs! They are all bad for you and completely unnecessary in your dietary plans.

I didn't control fats or carbs during the loss phase (or after, for that matter) as protein and calories does the job fine as long as you are getting in good quality food (quality over quantity works better than counting grams of carbs, fats, or whatever today's fad is.) Typically, concentrating on a good quality balance of the non-protein foods yielded a rough split between fat and carb calories. My primary interest beyond the basic weight loss was in establishing and maintaining good dietary habits for the long term over anything that might juice up the loss in the short term (and yes, too much fat over time will still make you fat, just as too many carbs or protein will, just as it always has - our physiology hasn't changed even though diet fashions change.)

Haven't got a clue. I think fat is an important part of a healthy diet, so I don't do anything to mitigate it in my own. I eat protein forward, avoid carbs, and stick to 4 ounces a meal and figure it'll even out. I do know I'm not getting as much as I should be, since my skin is ridiculously dry at the moment. :(

I don't track fat intake. I've set up my MyFitnessPal to track calories, carbs and protein and water. I use regular butter and mayo. I figure as long as I'm staying within the guidelines of my program, I'm all set. It's working fine for me! It takes a lot of work to track what I have to track now - I'd hate to have to add something else too.
