Pancit is a very popular Filipino dish which I've never had, and when I looked it up sounds very interesting!
I do have several ground fish concepts in the works that should be pretty good. Developing them without the classic use of bread, flour or corn starch is always the challenge.
Many cultures have their own version of a fish ball. The one I'm the most familiar with is a very popular Japanese street food called Takoyaki (octopus balls). I've watched these guys in Tokyo for hours making hundreds of these things.
I even bought the machine (shown below)
The closest thing I have published on Cafe Frisco is Shrimp Cakes (which are killer), that same recipe you could interchange fish and form into balls and cook the in a skillet.

The majority of the people I work with are Filipinos.. So, I get to try a few different dishes... This being one of my favorite... One lady brought me a tray of this today for my birthday!!! So, here is her pancit... And my favorite sooooo far!!!
