Looking for things with Fiber I can easily fit that doesn't have a lot of carbs
I average 20-30 grams of fibre daily, BUT I'm 7 months out and don't count carbs. Getting in that much fibre (especially at 7.5 weeks) is pretty much impossible if you're trying to stay under 40 carb grams unless you're counting net carbs. If you're counting net carbs you can do very well with Quest bars, All Bran and original Fibre One.
Flax muffins in a minute have loads of fibre as well. Even now I have trouble eating a whole one, so I've found a way to make 1/2 portions:
I break several eggs into the blender, blend them, and keep them in a bottle in the fridge. To make a small MIM I measure 2 tablespoons toasted flax meal, 1/2 tsp cinnamon, 1/4 tsp baking powder and a packet of Splenda into a 1/2 cup bowl. Stir, then mix in 2 tablespoons of egg, pop in the microwave and cook for 30 seconds. I cut my wee muffin into 3 slices, add a bit of sugarfree jam and call it breakfast.
As an extra easy way to make these I lined up several 1/2 cup Rubbermaid containers this morning. Measured in the dry ingredients, put on the lids and stacked them in the fridge. Breakfast (or snack) can't get much easier.
PS. The blended eggs are also really convenient for scrambled eggs, French toast, custard etc in Fred-sized portions.

Sorry to hear that you are having trouble with your bowels lately. The two kind of bread that I like to get are "Mission Carb Balance Whole Wheat Tortillas Small - Fajita", Serving Size 1 tortilla (28g), it has 10g of fiber and has 13g of Total Carbohydrate. Since it has 10g of fiber in it, it knocks off 10g of total carbohydrates which means it will have a total of 3g of total carbohydrate (net carbohydrate)
The other bread that I use is "Brownberry Whole Wheat Double Fiber Bread", The serving size is: 1 slice (43g), it has 6g of fiber in it and it has a 21g of Total Carbohydrate, which means it knocsk off 6g of fiber which means it will have a total of 15g of total carbohydrate (net carbohyrate).
These two breads do fit my stomach. Since you are 7.5 weeks out from surgery, I don't know if you'll be able to have one slice of bread at 7.5 weeks out yet (one whole slice), but you'll be able to once you get further out from surgery.
You can talk to your dietitian about fiber intake and carb. control.

I use two things for fiber. In the morning I put in Trader Joe's Secret of the Egyptians ... which is basically Psyllium Husk. That is the only ingredient. Two tablespoons which is what I throw into my protein shake every morning is 35 calories, 10g carbs, 9g fiber (therefore only one net carb which is what I look at despite what others do or say on that topic). I have been using this every day for about 5 months now. It definitely has helped.
At night I add Wildroots - 100% Natural Milled Golden Flaxseed http://wildrootsfoods.com/products/Grains_seeds/flax_seed.ht ml which I buy at Walmart in the cereal aisle. Two tablespoons is 60 calories, 4g carb, 4g fiber (0g net carbs), 3g protein. Added benefits are Omega 3s. Since I am in maintenance basically I add this to a bowl of oatmeal. I use the Silver Palate Oatmeal http://www.amazon.com/Silver-Palate-Oatmeal-Thick-16-Ounce/d p/B00238ZZDO which is only 100% Whole Grain milled oats. Nothing else added. The oatmeal I cook up in about 30g sizes. This adds 113 calories, 20g carbs, 4g fiber (16 net carbs), and another 5g protein. Remember I only started doing the oatmeal thing after the weight loss phase. The flaxseed could be added to other things as it is a powder basically.
If you need other ideas let me know. I usually can come up with something.
In terms of food items that will help keep you chugging along, how about half a cup of steamed broccoli per day. Low calories and carbs, lots of fiber, and even a little protein.
And, according to Frisco's Pyloric Valve 101 post, the stalks can help close the pyloric valve, leading to a longer feeling of satiety.
Of course, do wait until you are on full solids before trying broccoli.
I am on solids. My sleeve is moody though. Late night if fits a lot during the day barely anything. The last couple of nights I tried raw veggies. It went right down. But I think it will be awhile before it corrects the problems since I've been only eating protein with only an average of 5 grams of fiber per day. So I'm working on increasing the fiber since I have a big problem. It may mean going over 40 carbs a day but they will be good carbs. (Veggies and berries. ) Yesterday I had a quest bar to get my fiber numbers up. I finally went without an enema but I still had a very hard time.

Fresh spinach. Cook some fresh baby spinach in a little butter or olive oil. You can chop it up after it is cooked with kitchen shears. It even has protein. Also, asparagus, salad greens, dark green leafy veggies, cucumbers, summer squash, green beans, cauliflower, and radishes.
All of these are low in calories and carbs and high in fiber.
