My flax muffin in a minute came out too dry. Any suggestions to moisten it?

Any tips to keep it from being so dry.

I made a muffin in a minute last night

There's are the ingredients I used:

1 packet  splenda (In general I will use stevia but I thought I'd start with splenda cause I knew the sweetness would come out right and I wouldn't have to worry about toggling it.

1 tsp lemon extract

1/4 tsp baking powder

1 tsp oil

1/4 flax ground meal

1/4 cup egg whites (from carton)

Stats:

Calories 181

Carbs 8

Fat 14

Protein 12

Fiber 9

HW 302 lbs SW  279.8 lbs.  CW  193.8 lbs   MFP Jarabacoagirl  Preop diets 22.2 lbs, 1st month 21.2 lbs, 2nd month 14.6 lbs,  3rd month 11.2 lbs, 4th month 7 lbs, 5th month 7 lbs, 6th month 6.8 lbs, 7th month 5.2 lbs, 8th month 4.4 lbs 9 and 10th months slowed down didn't record exactly

108.2 lbs lost from highest weight!

 (86.2 lbs of that was lost since surgery date)

I have used sugar free maple syrup,sf chocolate syrup, but primarily I use agave syrup.  Calories yes, but lower on the glycemic index.  I do wonder how unsweetened applesauce would work though.  I also use a full egg, maybe that helps.

yes to the applesauce, also you can add yogurt(more protein) or pureed prunes (so you can get other benefits from them,if you need it)

Try cutting back on the cooking time a second at a time till it is like you want it. not all micros are the same strength so it stands to reason that everyone's MMV. I actually have to cook mine a minute and a few secs since my machine is small.

Try cooking it for less time.

I make mine with:
1/4c toasted flax meal (Costco)
1 large egg
1 packet Splenda
1 tsp cinnamon
1/4 tsp baking powder
1 tsp water

215 calories, 12.8g carbs, 9.2g fibre, 12.1g protein
Don't be afraid of using a real egg. Yes, it has fat - we need some fat.
Yes, it has cholesterol - it also has lecithin, so no probs.


I also multiply the recipe and either make "pancakes" or actual baked muffins. They're extremely filling, so I make mini size. (each about 1/3 of this recipe)
