Eggface's Cheesy Cauliflower Casserole

 After eating a few bites of garlic lime marinated pork chop, I tired just a bite or two of Eggface's cheesy cauliflower casserole. It was so good!!! It is a family hit. My husband said, "Can we have these mashed potatoes every night?" He knew it was cauliflower. He was just making a point. It was great!!

 Sounds absolutely delicious - but the fat content is out of control and relatively low protein.  I'm wondering - is the fat from the cheese or something else?

Yes...I didn't have any lowfat cheese. That would have made a difference. Right now, being 7 weeks post op, a bite or 2 doesn't really factor in. But if I were to eat a full serving, then I would substitute lowfat cheese.

Actually i think it's fine.  The numbers are for a cup.  as a side dish we would probably eat at most 1/8 of a cupm so if it's good and tasty it would be fine with a chicken thigh or some source of main protein/

 I know eggface is on maintenace and is not concerned about fat content. 

I'm so envious you can eat pork. I have not been able to eat pork since my surgery. I get a very sick, full feeling if I eat even one bite. Then I feel like i have to barf.

This German girl really misses her pork!

Well LOL I've never really been concerned about fat content. I do full fat... it's more satisfying to me (mouth feel, yumminess) and so I eat less and am content versus lowfat or horrors non-fat which would leave me wishing for the real deal and sad :( plus... non-fat = scary weird words in the ingredients.

You can certainly cut the cheese (umm LOL) a bit and get a similar taste (all of my recipes with the exception of baked goods are adaptable like that) but yeah a dollop or 2 with some grilled chicken or fish works for me.

Oh on the pork... I have issues with pork too... miss a good pork chop but 2 bites and I'm holding my side :(
