I made the Ricotta Bake...
I am looking for a week's menu - are you willing to share? I am currently 5 months out and need to be a bit more organized and prepared due to such a busy schedule. [email protected] Thanks in advance! I want to try the Ricotta Bake - sounds really great.
I generally only plan dinners... since I have lots of left overs for lunch.... and keep in mind, I am 15 months out and toying with maintenance.
Sunday: grilled peppers/onions/sausage (hubby is grilling)
Monday: ricotta bake (theworldaccordingtoeggface.com)
Tuesday: chicken n veggie stir fry (will make rice for hubby)
Wednesday: baked fish with steamed veggies
Thursday: something from the freezer (I freeze left overs and take them out for busy nights--thursday is busy--meeting at church just after work)
Friday: breakfast for dinner!!! veggie omlets (I love this... hubby not quite so much)
Saturday: left overs (because there always are some... if no left overs, I generally make a frozen entre---like the chicken voila frozen dinners.... or something along that line... not generally the healthiest... but I already have enough going on for saturdays to really prepare a big meal...)

I have made this as well, it reheats well for taking lunch to work. I have also tried a little twist, I used diced green chilies and enchilada sauce, pretty tasty. Oh, when I did this, I substituted a little cheddar for about 1/3 of the Parmesan. I might try layering the mixture between cooked spaghetti squash if my garden produces any this year. I am pre-op & DH is 7 months out so we can add these non-mushy things.
