Southwest Crockpot Chicken Recipe

Thought I would share one of my fav recipes. This is a super easy/inexpensive recipe. The recipe is as follows:

1 pack of chicken breast (about 3), rinsed and excess fat removed
Salsa of your choice
1 can of black beans, rinsed
1 container of Philly cooking creme
I used the original flavor but have used the Sante Fe as well-really good.
To save on calories, I have used 1 small container of 0% Fage Plain yogurt
instead of the Philly cooking creme.

Place chicken in crock pot. Spoon a little salsa on top. I dont cover the chicken just a tablespoon or so spread on top of each. Cook on low for 4-5 hours. Remove chicken from crockpot and shred. Discard remaining liquid in crock pot.

Add the shredded chicken back to crockpot along with the black beans and Philly cooking creme. Add a few heaping tablespoons (I think I used 6) of salsa. Stir. Then season to taste with salt and pepper.

This made 6-6oz servings (my size). Per myfitnesspal.com: Calories: 228, Protein: 21, Carbs: 13, Fiber: 4, Fat: 7, Sodium: 621. I dont have the stats using the greek yogurt but I'm sure the protein would be higher and the sodium might be lower.

It is cream cheese but a much softer/creamier consistancy. They have a quite a few flavored cooking creme's that are found by the cream cheese in the dairy secton. I've only tried the original and Sante Fe but there are a few I would love to check out.

Be forewarned the first thing it brings up is there newest flavors: CHOCOLATE mixed with cream cheese. I'm not EVEN going there on that one but it looks so good!!

I have also heard that substituting Chobani yogurt for things like cooking creme works well too. Thanks for the recipe! This sounds good!
