Meatloaf muffins

there is a recipe for meatloaf?  i've always just tossed stuff together....  i'd think than any meatloaf "recipe" would do, just roll it into balls and put it in muffin tins....

Hi Mrs. Joe I hope you like it.  I think I wrote that it was Louis Rich turkey and it was JennieO.  
Any Italian seasoned ground turkey would work, I guess..

Hi kimbethin! Thank you so much for the recipe! I made them tonight and I had seasoned turkey sausage that I used. I am not ready for that kind of food yet but just had to make them. So far the family loves them, and I think in the muffin tin is a great idea! Post more good stuff, I love to cook!

I'm glad your family liked it. It's so easy! I also use that turkey as a pizza topping with a tortilla or lavash bread for a crust.  I'm trying to come up with new ideas to help me stay on program.  My freezer is so full now that it will be a few weeks before I need to cook again.  Post some of your healthy faves too- I love the recipe sharing on this site.

There is a lot of things you can make in muffin pans.  Especially using the mini muffin pans.
Simply you can do eggs and a few other ingredients like cheese.  or eggs cheese and spinach.
That is for later out.   At your stage when your ready to eat in a couple or so,,,   beans eggs and cheese in muffin pan is also good....  but make sure you can eat these foods first.  Come to think of it,  I think you are still on your full liquid stage.  Anyhow,  you can make up some cool recipes i

 Frisco, while I love eggplant I get iffy results when cooking at home.  I always cut and sweat them before cooking but I still often end up with a very bitter flavor.  Any ideas?

Frisco, the lasagna looks amazing!  I remember seeing you post something similar when I was on pureed foods and thinking, "one day...". I am going to make it this weekend!  Thanks for the reminder!
I think the muffin tin ideas are great, too. Nice portion contol, attractive results  and things you can make ahead.
