From my Nana's recipe box...

My Nana (italian grandma) use to make us Lupini beans usually at christmas time..I didnt like them until I was older..She is gone now but sometimes I make them and think of her..its a process that usually takes about 2 weeks...the 2 week process is worth it as the prepared ones are GROSS and unpalatable!!

Lupini beans can be bought dry at specialty and italian stores.
Rinse the dry beans with water. Bring to a boil in salted water for 20-30 minutes.
Leave in a container in the fridge covered with well salted water for 2 weeks, rinsing and changing the brine DAILY. This will remove the bitterness and make the beans edible. Without this 2 week process the beans are inedible due to the alkaloid content which is removed during soaking. When they are ready after about 2 weeks they will no longer be bitter. You can eat them sprinkled with pepper and salt (if needed) or drizzle a bit of good olive oil, parsley, crushed red pepper, and garlic powder sprinkled on. They are good in place of a salty/chippy snack..simple use your teeth to split open the outer covering that encases the beans.


In the bean categoy Lupini beans are second in protein content only to soy beans!

 These sound very interesting.  I wonder where I can buy them as I live in a smaller area.  Thanks for the info on them.  I'm always looking for new and exciting foods to try.

My local grocery store carries them in the "ethnic" aisle. Where they have speciality foods like Asian, Mexican, Italian, kosher, etc... The brand name that comes to mind is Victoria's. Word of warning, rinse them off from the preservatives and restore in fresh water. They're yummy!

Can you post a pic of what they look like(dried and/or finished)? Might have to get a store to order them.
