Victory! Hitting "goal" and for newbies, how to pick a number...
Congratulations on hitting your goal, or at least your initial one! I took a similar approach in picking a goal of 15% body fat, which is on the lean side of normal for men. Making the gross assumption that only fat is lost (it's a starting point) that works out to about 200lb for me - at which point I'll look at everything and decide what more needs to be done, if anything. If, like you, that means another 10 or so pounds, so be it, or at least until everything feels right.
I mostly use a Tanita body comp scale for the quick readings. It correlated well with a dunking I did a couple of years ago. The main problem with either method is that they are dependent upon average parameters for various body sizes and if you have an unusual composition for your size (as in lots of excess skin but not much fat,) their readings can be somewhat off. My wife got dunked the same time that I did, several years after her DS but before reconstruction and her readings didn't make a lot of sense - it seems that much of that excess skin is read as fat. YMMV Short story - be happy when you get down to a weight that is healthy and comfortable.
