Lets fight about weight versus volume versus eyeballing, shall we? :}
Eh, I do a little of all three :)
I weigh my meats and other solids (amazingly, they generally come out about the same in volume..) and measure by volume things like cot cheese, and other soft liquidy stuff if needed. I eyeball on occasion if I'm not home, but my eyeballs are still not trained right, so they tend to put on more than I can eat.
I also weigh most proteins and cheeses so I can keep tabs on the nutrient counts since I'm a bit control freaky about that.. eh, to each their own. But I happen to love my scale, and so does my sleeve as I've never over-eaten as long as I've weighed.

I always weigh. I'm a fast eater... not measuring gets me in trouble. I have to weigh out 1 7/8 ounces of dense protein. I eat that in about 3 or 4 minutes. If I were to eyeball it and put 2 1/2 ounces on my plate... by the time my stomach realized that it was full, it would be too late & I would be sick.
Like you said, everyone has to find what works for them.
And for the record... I hope you've got a permit for those guns.
