Grilled Sweet Potatoes w/ Coconut-Peanut Dipping Sauce
Holy crap. I was searching for something else, and came across this recipe. With some modifications (such as peanut flour and some tweaking with the SF syrups), I think this is a winner for a change up every now and then. Some other sweet potato topping ideas the person listed: A baked sweet potato topped with peanut butter, coconut butter, cinnamon, and banana slices. If I’m feeling crazy, I’ll top it with some Greek yogurt, chocolate chips, and/or shredded coconut. (not all my be appropriate)
