Good substitutes for Carb loaded foods. Tell us your fav!

This has come up in several threads a little at a time and I thougt it would be good to get all in one place.  if you have  alow carb option to a higher carb item that TASTE GOOD let us know.  Or a substitution that adds protein (not just protein powder)  the idea behind this is to get a list of items that we can stock our pantries or fridge with.

I will start with my favorites

* Rice-  Tonight I had cauiflower rice with meat and gravy and it was great.  this will be a staple in my house from now on.  Cajun cooking uses a LOT of rice

* Sour Cream-  OK it is not high carb but I have discovered that blended cottage cheese taste about the same and it has more protein.  I love sour cream so this is a good thing for me

* Bread for sandwiches-  I now use Low carb tortillias and make wraps.  My kids eat them too and at 4 carbs they are a great alternative

* Ice Cream-  Bryers carb Smart ice cream bars.  My new weakness at 5 carbs each I font feel guilt with my nightly indulgance (especially since I started losing agiain right after I started eating them)

PLease add more ideas.  Newbies can bookmark this thread if we get enough good stuff listed here since when you first start out it is hard to know where to start :)

Also, those of you on Soymilk, switch on over to Almond, saves you a few carbs and is deeeelish even when Plain/Unsweetened and has the same consistancy as milk.

OMG!  I haven't been hungry or tempted at all - until I saw a picture of that pizza!!!!! I can't wait.  My mouth watered.

Meatza....Hamburger crust instead of old fashioned bread crust!

1 ½ lb ground beef or ¾ lb ground beef mixed with
¾ lb Italian-style sausage
1 small onion, finely chopped
1 clove garlic, crushed
1 tsp dried oregano or Italian seasoning(optional)
8 oz pizza sauce
Parmesan or Romano cheese (optional)
8 oz shredded mozzarella
Toppings-you choose (peppers, onions, mushrooms, or whatever you like)
Olive oil (optional)

1. Preheat the oven to 350 degrees F.
2. In a large bowl and with clean hands, combine the meat with the onion and garlic, and a teaspoon of oregano or Italian seasoning. Mix well.
3. Pat the meat mixture out in an even layer in a 9 x 12-inch baking pan. Bake for 20 minutes.
4. When the meat comes out, it will have shrunk a fair amount, because of the grease cooking off. Pour off the grease and spread the pizza sauce over the meat. Sprinkle the Parmesan on the sauce (if using), and then distribute the shredded mozzarella evenly over the sauce.
5. Top with whatever you like: green peppers, banana peppers, mushrooms, olives. You could use meat toppings, such as sausage and pepperoni, but they seem a little redundant since the bottom layer is meat.
6. Drizzle the whole thing with a little olive oil.
7. Put your Meatza! 4 inches below a broiler set on High. Broil for about 5 minutes, or until the cheese is melted and starting to brown.






WW Hamburger Soup

1 1/2 Ex lean ground beef
1 Lg onion chopped
2c Water
1/2 tsp Tyme
4 Carrots chopped
8 TBSP Barley....I use QUINOA...better punch for it's buck..protein power
1- 28 oz Can of tomatoes
1 Can of tomatoe soup
1 Bay leaf
3 Stalks of celery
S&P to taste
Parsley to taste
3 cans of Beef stock or 2 beef bouillion

Brownn hamburger and drain. Then mix all ingredients together and cook atleast two hours. Makes about 10- 1 cup servings. Freezes well! and delishes.

VSG on 04/17/08 with
Mock Mashed potatoes...Made it tonight, family loved it!

1 head cauliflower, washed cut up, boiled til soft.
Mash, add 1/2 cup sour cream, 1/2 cup (old) cheddar, stir, bake at 375 for 15 mins.
