Cottage Cheese Pancakes - delish!!

Okay, I just had a batch of these for lunch and this is the 5th day in a row I have enjoyed this recipe. Even if you are not a cottage cheese lover, give these a try. You cannot taste the cottage cheese in the batter and they are so light and fluffy. I have been experimenting with toppings besides SF syrup and today I hit the jackpot. Here's what you do:

In a Magic Bullet or small chopper, mix the following together:
1/2 cup low fat cottage cheese
1 egg or 1/4 cup egg substitute (I tried both and prefer the substitute)
2 tablespoons flour
2 tablespoons Splenda
1 teaspoon vanilla
dash salt

Spray and heat a griddle until hot. Spoon silver-dollar sized batter onto griddle and coo****il they start to bubble. Flip and cook on other side. The batter yields about 6 small  pancakes or 4 larger ones.

Topping Ideas:
melted SF apple butter
1/2 sliced banana
1/2 cup microwaved frozen strawberries blended in Magic Bullet

Here's what I did today and it's my absolute favorite.
1/2  cup frozen fresh peach slices (I used Walmart brand and they were awesome)
spoonful of Greek yogurt
2 packets Splenda
blend in Magic Bullet, warm in the microwave and pour onto pancakes. The yogurt makes the sauce nice and creamy and the sweetness of the peaches is wonderful.

The only difficulty I have with this meal is that I love it so much I tend to eat it too fast. You honestly cannot taste the cottage cheese and would not know that these aren't "regular" pancakes. Both my husband and son tasted them and gave it a thumbs up.

This is similar to the ones I make (I can't have splenda so I use other things) and also how I first started to eat cottage cheese since I could not stand the sight of it.  I am stopping by the store tonight to get some and trying them again...it has been a while and you talking about them makes me want some!  I need to try the fresh fruit as a topping, too!

Yep...it'll work.  I have both but prefer the magic bullett.  It gets less air in the mix and is smaller for my small kitchen!

I made these and they ROCK!!!!!!!!!!!!!!!   I thought they were a little sweet so I am going to cut back on the sweetener next time but what a great thing to keep on hand to even nibble on to get in that protein.  By the way, they tasted like crepes to me...........yummy. 

Heck, I am going down to make some now.......I love how easy they are to make too.
