A few weeks back there was a dicussion about a carrot cake recipe. Someone mentioned a product called Carbquik, which is a low carb product similar to Bisquik. I want to thank you because in searching to get my hands on the product brought to my attention another company with great products. I went to the website of the manufacturer of carbquik, and searched to see if a place locally where I live has the Carbquik. I was lucky and had two local places that sell it. I contacted the first place and they had it and sell other low carb,high protein, and fiber products. In fact, the place offered to give me free samples of some the other products they sold, which something that some companies do not do anymore. Now, I do not recommend companies very much but this company has some great tasting product they make their own granola that is great tasting and a high protein chocolate chip cookie is also good. So here is the link for the website of the place I found the carbquik, granola, and the protein cookie. This place also makes a hot cereal which is great also and several other products.

As for the Carbquik it is a great product I made some sugar free chocolate chip scones and my family loved them. My next venture is going to be sugar free blueberry scones, which I will be making this weekend. Thank you once again for mentioning a great product such as Carbquik.

I love scones and my husband makes them all the time.  Please share your recipes with us as I would like to try a lower carb version with the Carnquik.

The one recipe I have tried was one on the manufacturers website the recipe makes them real biscuit like but I liked them because they are more like what a scone is suppose to be. I found a recipe for blueberry scones that I will be making here probably tomorrow after the kids soccer games in the morning. I would have replied sooner but I was out picking up stuff from the place I get my Carbquik from. I love this place  they did not have my granola I order and gave two free bags of another flavor plus 2 protein cookie, and a protein pancake mix to try. Plus, I told him if he works on reformilated any of his stuff let me and I will try it. My nutritionist really wants me to boost my protein intake, which on average is 80-110 grams a day. I will let you know how the scone recipe goes this one has yougurt in it and so I figured I try this one first for a fruit scone.

As I try different recipes I will share the recipes with all who would like it. I tend to convert regular recipes to low fat, and low carb. Just have to substitute this for that and adjust the recipe to your taste. The one thing I have learned from my gastric bypass surgery is your taste changes. One thing I do not care for very much is chocolate so I have to tune down chocolate protein shakes and watch the protein bars. I never cared for a lot of chocolate before the surgery. I battling food issues right now with chicken which I cannot eat very much of it unless it is finely shredded and meat loaf I used to make 2 months ago I cannot eat anymore. I am currently working on adjusting my meatloaf recipe to see if I can adjust it so that I can tolerate it again. Hey, cooking is fun and you learn a why they say cooking is a art.

Here is the recipe I used today for my blueberry scones

2 cups of Carbquik
1/4 cup of Splenda/brown sugar mix ( you can buy this at any grocery store)( thee recipe originally called for brown sugar)
1 tablespoon baking powder
1/4 teaspoon salt
1/4 cup I can't believe it is not butter (the recipe orginally called for butter)
1 cup of frozen or fresh blueberries (rinse and drain)
1/2 cup of plain yogurt ( I used french vanilla low fat yogurt from Wal-mart)
1 egg

Directions:
1. Preheat oven to 375 degrees F
2. Cut butter into mixture of flour, sugar, baking powder, and salt. Add blueberries and toss to mix.
3 In a sperate bowl beat together yogurt and egg, and slowly pour into dry ingredients, stirring with rubber spatula until dough forms, Knead until it comes together. Do not overhandle
4. Dived the dough in half and lightly board. Shape the halves into 6 inch rounds and divide into 6 wedges
5. Bake on  ungreased sheet about 20 minutes at 375 degrees F.

Special notes:
I would watch the cooking time as with all ovens the cooking time varies. I had to cut the to 16 miutes for light golden brown scones.
If you like a lot of sweetness you may want to adjust recipe to add either more brown sugar/splenda mixture or I would just add a little splenda or some other artificial sweetner you prefer. As I do not like real sweet scones the sweetness was fine to me.
My next recommendation would to try this recipe with blueberry yogurt.

* I like this recipe as written but I am planning to make some of the changes as I recommended as the purpose of making the scones is for my entire family not just me. *

I don't like real sweet stuff, either so prefer something with just a hint of sweet to it.

One last thing on that recipe I would also cut the blueberries to actually 3/4 of a cup. The scones have a lot of blueberries in each and can be a little overwhelming. Also, I would eat these scones slight warmed. But overall a good starting recipe that needed to be modified for people watching carbs. The next batch I make will be this recipe modified further so that they are enjoyable for the entire family but watching the carb content is the main issue.

Hey Liquidman69, would bisquick heart healthy work till I could get some carbquick? My hubby and I love scones and would love to try this. Also I might try and make a savory bacon cheese twist on it! It would be cheaper and healthier than Central Markets bacon cheese scones (4for $4.99)!

Yes, you can use the Heart Healthy Bisquick.  I happened to use Carbquik because someone mentioned it in another post a few weeks back. I am a person who when something catches their eye I look into it. I saw that Carbquik was a lot better than anything else so I went on a search for it. I also hate paying for shipping on items and so I found a small internet company that is local in my area that also sells Carbquik and was a quick 4 minute drive from my house. However, I read on Carbquik website that they are going to try selling it at Kroger's soon. Which does me no good no Kroger's in Austin area the last time I checked.

I just hate not finding a lot of stuff low in carbs especially sugar that I used to enjoy scones is one plus some other baked goods. The Carbquik changes things now, I can make things for my self healthier and know exactly what is in it and not have guess. But for now trying things one at a time. I like cooking and sometimes do not do as much as I like but that is one thing that has changed since having surgery, which has been a good thing for my over all health.

Looked into the Carbquick and yes it looks great! No one in a 60 mile radius of fort worth carries it! Netrition had it on sale for $11.99 but it is a 3lb box! At Carbsmart it was on sale for $17.99. However I like you hate to pay for shipping so I may try my least favorite store Kroger and will watch for it! Tks for the recipe!!
