A Couple of New Recipies-Sharing
I tried a few new things this week and wanted to pass along as they received rave reviews in my house - good luck!
Veggie soup - Easy and I added lean ground beef for protein (could also add soy instead)
1 bag shredded cabbage
1 med chopped onion
1/2 bag baby carrots
2 stalks celery chopped or diced
1-28 oz. can diced tomatoes, don't drain
1 can corn (drained)
1 can pinto beans (could also add black beans for more protein)
1 can green beans (drained)
(I added a little extra water to make it more soupy-about 1/2 can)
Brown beef, add diced onions & celery. Dump all other ingredients together, cover and simmer/boil for about an hour. YUMMY, low cal, low fat and lot's of good fiber plus very filling!
Easy/Spicy Chicken Breasts!
1 package boneless/skinless Chicken Breasts (should be a package of 4)
1 large jar of mild salsa
1 can medium olives or sliced olives
1 red bell pepper
3 jalenpeno peppers - fresh
Foil
Get foil ready to individually wrap each chicken breast (to make a pouch). Slice jalepeno's and slice bell pepper into thin stripes.
Take 1 chicken breast, place onto foil, spoon 1/2 cup salsa over it, layer fresh jalepeno's, olives and some bell pepper slices on top. Seal the foil around the individual chicken breast and put into pan for baking. Repeat for each breast and bake at 400 degrees for 60 minutes.
Each one will be spicy, juicy and very yummy!!! I was able to eat 'white' meat without it getting stuck!
