Crockpot Tijuana Pie

This was a recipe request.  It's packed with protein and really yummy.

Crock Pot Tijuana Pie 1.5 lbs. ground chuck 1 onion, chopped 1 tsp. salt             1 garlic clove, chopped ¼ tsp. black pepper 3 c grated cheddar cheese 1 (10 oz.) red enchilada sauce 1 can tomato sauce 2 cans chili (w/ or w/o beans) 1 can corn, drained or 1 c frozen whole kernel corn 1 can (6 oz.) black olives               6 corn or flour tortillas                 Brown beef with onion and seasonings, including garlic. Wipe crock pot with oil. Spread 1/3 of tortillas on bottom, then put on chili, cheese and corn. Put on 1/3 more of tortillas, then layer meat, sauce and cheese; repeat. Add black olives if desired. Cover and cook on low 5 to 7 hours. Makes a FULL crockpot. Freezes well.

KARLA-I have several crockpots-stupid question-How do I know WHAT SIZE they are, and which one to use????

I have an oval one which is larger than my original one.  I bought a new one that turns itself to "warm" when it gets done cooking...it was full to the brim.  It's probably 4-5 qt.  I guess that means use at least that size.  I guess that's not a very good answer!

That sounds great! I think I might do this one for Stephanie later this week. I put together a roast and a King Ranch Chicken for them last night and my niece is going to cook the roast for her today.

We will be in Livingston Saturday. My son-in-law's Mom has my grandson while Steph is recouperating and we are meeting them there to pick him up. I think she said we will meet them at the Alabama Coushatta Store.

That figures...I think I'm going to my nephew's ball tournament in Huffman Fri and/or Sat.  One day I will get to see you in CS!  Haven't been back since the A & M/UT game in November. 

Ben's staying in CS this next weekend.

Sounds yummy but - alas - too much food for one person. That's my biggest challenge, cooking for one. I don't have a big freezer (apartment) so can't put too many leftovers in it.

You need to find a cooking buddy.  You can make this and refrigerate part of the leftovers and share the rest.  Give you food for a couple of days.  Just a thought.
