OT Guac dip............. Question

If you use one of those spice mix packets from the store that you mix with your own avocados, about 3 hours, max (per the package instructions) .. !
I bought some of that stuff for the first time the other day .. You make it up, chill in the fridge for 1/2 hour,"re-mix" and then serve w/i 3 hours.
I did NOT like the spice mix method, btw, as it actually seemed to have some hot spices in it .. I prefer to make my own from scratch and keep it mild. Keep in mind that if the dip "browns out" a little from age, you can add a few drops of lemon juice and re-mix it and it will lighten out considerably. You can also use "Accent" or "Fruit Fresh", for that purpose, but that stuff can be bad for you if you have high b.p.
As to "safety", I think the length you can keep it unrefrigerated varies depending on whether you use mayo in it or not
I had to raise a big stink at my loczl Wal-Mart last week b/c it seemed they would only get in totally unripe avocados .. I noticed yesterday they were almost ALL ripe, for a change, and some even overripe ..
btw, did you ever get the chest of drawers you were looking for, for your daughter, Phyllis?
