Do it like Liz said, the day before. But make sure you add some lemon and lime juice to keep it from getting too brown. And also stir it up when you get to the luncheon so the brown doesn't stay on top. I looooove homemade guac and it keeps for a long time!

Guacomole can be good for you in limited amounts... but for a healthier version make it with half (or more) pureed fresh or frozen green peas.... you won't be able to taste the difference!  I love green peas so much for my personal use, I just make it all fake... LOL

Save yourself some trouble and go get a couple of boxes of Wholly Guacamole.  It's as good or better and cheaper than anything you can make.  Put some extra oomph in it if you want to.  Since I found it, I doubt I'll be making 'homemade' anymore.  I buy it, and right before I take it anywhere I might add some extra stuff...

< what Janet said, if it's the one that comes in double tubs and made with Haas avocados >

That stuff has really gotten expensive though, the past year or so ..   I wonder what's up with that .

We like the Wholly Guacamole, too, but to me nothing's as good as the fresh I-just-mashed-it-myself stuff!  If you do it this way, leave a seed in it and cover the top with some saran wrap....so it's touching the surface of the dip. It's mostly the air that makes it brown and this way it's 'sealed' against the air. Take the seed out and stir it good when you get to work.

Phyllis, I use the Wholly Guac, but add fresh onion, jalenpeno diced, cilantro and one additional alvocao so it's chunkier and tastes fresh.   Sometimes you have to add a little more garlic powder too but it's yuumy!

Phyllis, a secret to keeping guacamole fresh and from turning brown if you dont like to add lemon is use some milk and it will also make it smooth and creamy...

i just made a huge bow sat for stromboli party and the guacamole was so good... all i added was tomato and onion avacados and milk and salt....thats it.....

good luck..
