Sunday WLS Express
Good morning to my fellow train riders. What a long boring day I had yesterday. I literally spent all day (8 hours) changing my computer OS from Vista to Windows 7. I decided i was going to work on my budget while it was downloading but the banks online site was down for maintanance all weekend so I couldn't get my statements. It's amazing how dependant on computers we are. So instead I did 7 loads of laundry (5 were Hailey's) and watched mindless TV all day.
No plans for today either. I told Liz to yell if she wanted some help carrying boxes or unpacking. Need to make a Sam's run, dye my hair and get ready for work tomorrow.

And with that let me go ahead and say that if you are a woman on TMB, you might need to be careful of a new poster that popped up a few days ago. I have already dealt with and reported this one.
It's a beautiful day.. I know because I have been awake to see it. A bit of insomnia, but I have that occasionally now. The usual Sunday plan of church, and HEB and some cooking. Not sure what Emm has on her agenda and I keep forgetting that she has the day off tomorrow because I DON"T. Oh well, I'm hoping it will be very slow with the phones.
Not much else going on so I guess I'm boring. So I'll just say...
Prayers to so many in need including our Meggie, and Eric and all those others hurting in body, mind and spirit.
Remember, we can do HARD things.

I haven't read all the thread yet...........but I DIDN'T KNOW THAT TIM WAS ON HIS WAY HOME FOR 2 WEEKS...........HOW COOL IS THAT !! whoo hooo..............
Okay - I decided last night that I was NOT going to work this weekend...........gonna clean house, laundry (done)............play, rest and just chill out...........cook or at least try to cook a little this weekend to get back on track..................plans to watch the cowboy game today too.....
I wanna make a chicken & spinach casserole today so plans to hit the store for that stuff......
I'm really tired of the same old stuff.........but just really don't know how to mix and match stuff...etc...... I know - tons......of recipes on here........been looking at them............feeling a little overwhelmed right now........hehehe.............
Gotta hit the shower and plans to go to costco just to look around since the day I joined was the week b4 Christmas......too crowded to really check it out to see what they carry vs Sams
I want to pick up a couple of steaks today and grill them out too.............just really hungry for major protein................think I'm a little low on that.

Chicken and Spinach Bake
9 oz bag of pre-washed spinach
4 boneless, skinless chicken breasts, uncooked
½ tsp salt
½ tsp pepper
2 Roma tomatoes, sliced
1 cup sliced mushrooms
1.4 oz packet Italian salad dressing mix
Balsamic Vinegar
2 cups shredded Mozzarella or Parmesan cheese
16 oz pack angel hair pasta
Place the spinach in the bottom of a coated 9 x 13" baking dish. Place the chicken breast on top of the spinach; season with salt and pepper. Place the tomatoes and mushrooms on top of chicken. Mix the Italian salad dressing according to package directions, substituting the balsamic vinegar for the regular vinegar. Pour the dressing over the spinach, chicken, tomatoes and mushrooms. Top with cheese. Bake at 350 degrees for 40 minutes or until chicken is cooked. Serve over pasta.
