Preparing for New Year - recipe thread
I like to make homemade chicken or albacore tuna salad when I am eating good high protein. I use light mayo to help w/ the calories. I eat it w/o crackers or bread. I also like chili, taco soup, etc. I'll see later if I can find some recipes.

This is one of our families favorites. When we go camping, my cousins always ask for it. I got the recipe from a friend, it had no name so I named it after her, GRETA'S STEW:
1lb hamburger
2 cans Rotel tomatoes
2 cans ranch style beans
2 cans Campbell's minestrone soup
Brown hamburger with whatever seasoning you usually use, I use dried onions and Lawrys seasoning salt and garlic powder. Add rest and simmer for 45 minutes or loger. Enjoy!!!
Protein bars
2 cups raw oatmeal 1 cup protein powder 1/2 cup flax seeds 1/2 cup wheat germ 2 cups trail mix (I use 1c. soynuts & 1c. sunflower seeds) 1/2 cups ground walnuts 1/2 cup coconut 1 cup honey 2 cups peanut butter Spray oil in 9x13 pan, spread mixture and cut
You can use any kind of trail mix you like, my friend makes it with some dried fruit in it.

This is my go-to comfort food that fills me up and makes me tongue happy (and waistline happier after indulging up to my bounceback max).
Jenny's super high fiber, protein rich, low calorie chicken numminess soup
Couple of chicken breasts (I like my soups to have lots of dense protein and lower volume of liquid than traditional soups so I do like 4 massive breasts - baked then cubed or shredded)
1 box of chicken stock
1 can of black beans, light kidney beans, and dark kidney beans
1/2 of an onion
Couple stalks of celery, sliced
Green pepper if I have it (or any other veggies)
Big can of diced tomatoes
1-2 cans of rotel
Spices if you want them - like a little garlic powder or celery salt
Put everything in a huge stock pot and heat it through. You're mainly cooking the veggies until tender because everything else is already cooked - you're just bringing out the flavors so they can mingle and dance on your tongue when eaten. Super easy and makes LOOOOTS of servings that last for days. Reheat 1.5 cups of dense soup in 4 minutes and you've got a meal that will stick to your ribs for hours. Very tasty! Gotta love superfood soup! Protein and fiber! YAY!

I still don't have time to get on my old computer, but will...here's a couple of chicken ideas besides plain old baked chicken breasts. I hate plain old chicken!
Italian: 4 chicken breasts, 1/2 c lt. mayo, 1/4 c grated Parmesan cheese (I use the kind in plastic containers or fresh, NOT kraft), Italian bread crumbs
Mix mayo and cheese in bowl. Spray pan w/Pam and take a spoon or knife and spread 1/2 of mayo/cheese mixture on one side of chicken breasts. Coat w/ bread crumbs. Flip chicken over and repeat. Bake at 350 degrees for 20-25 minutes and check for doneness. Don't overbake. It's yummy!
Deana's Chicken: Coat chicken breasts w/ Italian dressing (enough to wet them. Dredge in flour. Lay in greased/sprayed casserole dish or baking pan. Pour some more Italian dressing over the breasts. Put a pat of butter on each breast. Bake at 350 Degrees for 20-25 minutes or until done. This is great too!
