***Chili Recipe?***

Ok, back when I first had surgery, there were lots of posts about this chili recipe that was almost all protein... I loved it and cooked it a few times... until I lost it :(

Someone have it?

Kat, one of the girls posted this recipe for "Wendy's Chili" the other day... Here it is...

Wendy's Chili

1  pound ground chuck
1  15 ounce can of diced tomatoes (liquid included)
1  15 ounce can of red kidney beans (liquid drained)
1  15 ounce can of pinto beans (liquid drained)
1  8 ounce can Hunt's tomato sauce
1/2 medium white onion, diced
1  4 ounce can diced green chilies (with liquid)
2 Tablespoons chopped celery
2 Tablespoons ground cumin
1  teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon garlic powder
1 cup of water

1. Brown the ground chuck over medium heat, breaking into small pieces with the spatula. Add a dash of salt and pepper while cooking.

2. Empty the cooked meat into a spaghetti strainer, and rinse well under very ho****er.  This removes the bulk of the fat.

3. Transfer the beef into a dutch oven, and add the remaining ingredients. Stir together to combine thoroughly.

4. Over medium heat, bring to a simmer. Reduce the burner to low, and continue simmering 50-60 minutes, stirring occasionally.

I make one that is easy and resonably high protein
1 pound ground lean turkey or beef
1/2 onion
1 can chilli beans
1/2 can or 1/2 cup frozen corn
1 can diced tomatoes

chilli powder
cumin
garlic

takes about 20 min but our fav thing to do is make it the night before, stick the whole pot in the fridge for the fastest dinner ever - makes enough for 4 or 5 adults or 2 toddlers n a teenage boy with no leftovers

OK....stupid question. What are Chili Beans? Is that a type of bean? Or a pre-spiced can of some kind of bean?

not a stupid question - esp if I wrote it b/c my spelling is often off AND I am known to introduce people to new and odd foods -
I use the walmart brand  -they are preseasoned pinto beans, this is one of the few ways  I will use them b/c I am super sensitive to spice. I think they are like ranch beans- I add them and then very little chili powder and cumin and have a nicely flavored mild chili - I do mild you could add more spices or hot peppers or whatever- I just like this one b/c it is fast, easy and does not leave me eating leftovers for a month

Thanks...that makes sense. I don't do really spicy either. I like the flavor but not the heat....your food shouldn't hurt! I'm gonna try this, I need fast, easy and fewer leftovers!
