Sugar Free Pecan Balls
I got this recipe from a friend on the R&R board today, OMG they are devine. They taste like a Pecan Sandie.
FYI the mixture looks dry and crumbly when you do it......don't worry when you roll the balls they hold together. I never follow a recipe exactly, my comments are in parentheses. You don't have to use the powdered sugar if you don't want too.
Pecan Balls (by Rachelle)
1 C Butter (softened)
½ C Splenda Granular (I used 1 cup)
2 tsp vanilla (I used 3 tsp)
2 C All Purpose Flour
1 C finely chopped pecans
Powdered Sugar
Preheat oven to 350 F.
In a large bowl, beat butter for 30 seconds. Add Splenda and ¼ tsp salt and beat. Add vanilla. Beat in as much of the flour as you can with the mixer. Stir in remaining flour. Stir in pecans.
Shape slightly rounded teaspoons of dough into balls and place on ungreased cookie sheet.
Bake about 12 minutes, or until bottoms just begin to brown. Transfer to wire rack to cool. Dust with powdered sugar. Makes appr. 72.

Thanks Dana, I've printed it and plan to make them real soon. I will do the "splenda powdered sugar" to save on calories I might go to sparkpeople.com and check the calorie count when I make them just to see how high they are. (Lord knows the butter alone will do us in). But yummy trumps calories anyday.

I just ran the nutrition stats on it. Bear in mind, I used whole wheat flour instead of white flour so that may change things up a bit.
