spaghetti squash is dabomb! and so easy to make.  And faux mashed tators as well. Just haven't made them in forever.  But i'm hungry too!

i tried to use it once, but it was tough! Cant figure out how to cook it right???

Microwave the crap out of it! I cook mine for about 12-13 mins, sometimes a little longer after I slice it down the middle and start shredding it if parts are still undercooked. I like easy, and microwaving it is easy peasy mac and cheesy. 

As to the texture girl, it's spot on for coconut. And really - you don't NEED cocunut for anything but the texture IMO (besides macaroons obviously). With enough coconut extract though you don't need the real thing anyway!  

I'd say you should try again and see if my tips help. At $3-4 for a squash, you can use the left over squash for dinner, adding some light butter, parmesan cheese, sliced chicken sausage, and a side salad. OR pesto sauce and cooked shrimp. YUM! 

Crap. Now I'm really hungry.

slice in 1/2 long ways.  Core out the seeds.  wrap with plastic wrap and place on baking dish. Microwave about 10 minutes.  The best instructions I got were on the squash.

 Liz.....if  you like Coconut pie...let me know.   My mother was the very best of cooks.   She made Coconut pie filling from scratch and I have her recipe.   It is a old family recipe of hers.    I have made it with Splenda and trust me you would never know .  It is yummy but takes time stirring it on top of the stove.   If you want it I will post it tomorrow.
