Maple Pecan Chicken Recipe
I haven't tried this recipe yet, but I will soon. Using S/F syrup and Low Fat Mayo will help with the nutritional info.
Maple-Pecan Chicken
Dress up chicken breasts with maple syrup and crispy panko bread crumbs in this delicious 5-ingredient, ready in 30-minutes recipe.

Total Time: 30 min
Makes: 4 servings
4 boneless skinless chicken breasts (about 1 1/4 lb)
1/4 cup pure maple or maple-flavored syrup
2 tablespoons mayonnaise
1/2 cup Progresso® plain panko crispy bread crumbs
1/2 cup finely chopped pecans
1. Heat oven to 400°F. Line baking sheet with foil; spray with cooking spray. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/2-inch thick.
2. In shallow dish, mix together maple syrup and mayonnaise. In another shallow dish, mix together panko and pecans. Dip chicken into syrup mixture, then into panko. Place on baking sheet. Spray top of chicken with cooking spray.
3. Bake 15 to 20 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (165°F) and coating is golden brown.

Ooh...this sounds so good! I have some boneless, skinless thighs I could use.....breasts are too dry for me.
I'm still learning how to covert recipes so I need your opinions......instead of the mayo could I use greek yogurt instead? I've been replacing the mayo with the yogurt for things like tuna and chicken salads but I haven't cooked with it yet.

I personally wouldn't replace mayo with greek yogurt in this recipe. The fat in the mayo (even if you use light) is going to be way more flavorful than greek yogurt would be. Plus you're getting such awesome stats with the chicken protein and nuts as it is that you don't necessarily need to exchange it IMO. Don't be afraid of fat. A healthy dose of it daily will help ease constipation associated with RNY and make your healthy food more tasty - which is also very important for long term success!! A happy palate = a happy mind.
Dee, I agree with Jenny. I wouldn't substitute the yogurt for the mayo and in fact I would use full-fledged mayo. It's only 2 tbsp for 4 pieces of chicken and remember there is some malabsorption of fat, this little bit isn't going to hurt your weight loss.
