home made cereal bars?
does anybody here have a recipe for a tasty cereal bar that I can make at home? I need the fibre of a good cereal, but I've burnt myself out on "bowl of cereal, hot or cold, with splenda and milk". I just can't choke it down again. I thought maybe I could substitute a bar with lots of nutritious stuff and a yogurt for the dairy... Remember, here in Singapore, it's not always easy to find some common cooking items that we use in the States, but finding pre-made items for a diabetic-friendly, RNY nutritious, with tempting flavor, is almost impossible. Splenda is rare here and what dietetic foods I see are mostly from Europe or Australia, where the focus is still on just getting the sugar content right, not on taste. Talk about your cardboard cookies!!
You might want to check the recipe board....seems that I have seen some ceral bar recipes there.

u can try this one - depends how u do with sugars - but it IS high fiber - you might also ask for my move em out muffins (I can't find the recipe right now - surprise surprise LOL)
bars of iron
1.5 cups chopped mixed dry fruit - even just rasins works
add ginger if using fresh
cream together
1/3 cup butter
1 egg
1/4 cup splenda -or 1/3 cups sugar if thats what u have
1/4-1/3 cup molasses (honey might work too)
in another bowl mix
1.25 cups wheat flour (white will work but lowers the fiber)
1/4 cup wheat germ (found in the hot ceral sections in the US)
1/2 cup powdered milk
1 1/2 t baking powder
1/2 t baking soda
1/2 t ground ginger ( fresh is great - I garlic press about 1/3- 1/2 of a sm "finger" put this in with the fruit mix)
1/2 t salt
1 T orange zest
blend these two plus
1/2 cup milk
add
1 cup oats
1 cup nuts
and fruit mix
stir well
pour into 9x13 pan evenly - top with 1/2 c more nuts - bake 30 mins at 350 -cool in pan -cut into 1x4 in bars

thanks Danni, if you don't mind, I'll print this one and use it soon. I found some recipes on the website for FibreOne cereal, and I've got the ingredients for one of them that sounds good, so I'll give it a try. My hubby is stuck in the shipyard for a long day today and I'll have plenty of time to bake. Singapore is very nice, but they don't have a big weight problem, I guess, so the latest products aren't available yet, I can't find Splenda except the little individual packets on the beverage bar at Carl's Jr. So I stock up before I come over here.
I made these yesterday after digging the recipe out but was out of stick butter so I subbed pnut butter for it and it turned out great - hubby and boys have devored half a pan - if you eat like most people (not a teenage boy LOL) they should last you a long time - I cut them into 24 peices - 4 x 6 cuts in the pan
