Splenda Lemon Pound Cake
1 Pillsbury Reduced-Sugar Lemon Cake Mix (substitute yellow if you can't find the lemon)
1 Small SF Lemon Jello (the gelatin, not the pudding)
3/4 Cup Ho****er
2/3 Cup Oil
4 Whole Eggs
1 teaspoon Vanilla Extract
2 teaspoons Lemon Juice
Spray a bundt pan with non-stick cooking spray.
Dissolve Jello in ¾ cup ho****er.
Using a large mixing bowl combine cake mix and Jello mixture and beat. Add the oil and mix. Add the eggs one at a time beating after each. Add juice and beat for 4 minutes.
Bake at 400 until done. (Start checking after 40 minutes.)
Note - this cake shrinks as it cools. I think next time I'll use a loaf pan.
Optional glaze.
¾ cup Splenda granular
3 tablespoons cornstarch
3 tablespoons lemon juice
1 teaspoon lemon zest
Pulverize the Splenda and the cornstarch in the blender or food processor. Transfer mixture to a small bowl whisk in lemon juice and zest until smooth.

I still have no clue how we will Celebrate on Sunday - maybe we will just paint the town MAROON on Saturday instead!!

I think Saturday night celebration is the way to go. I have to catch a plan on Sunday around noon. Maybe we can manage an adult beverage or two. Bloody Mary's are kind of maroon.
