A different twist on slaw
Thought I would share this recipe with you all, it puts a new twist on slaw~I was watching "pudge porn" aka Food Network the Guy Fieri show and he made this slaw...Jicama Slaw; I am making today to take to a BBQ of smoked catfish....I just tried it and OMG it is wonderful....
Jicama Slaw
Guy Fieri-Food Network
3 TBSP lime juice
1/2 tsp red chili flakes
1/2 tsp chili powder
6 TBSP rice wine vinegar
1 tsp sugar-I did use real sugar b/c it was 1tsp
6 tablespoons EVOO
1 tsp salt
1 tsp pepper
1 1/2 cups peeled and julienned jicama
1 cup julienned carrots, I used a bag of matchstick carrots
1 cup shredded cabbage, I used a bag of angel hair cabbage
1/2 cup thinly sliced red onion
1 cup julienned english cucumber
1/2 cup julienned red bell pepper
1 TBSP chopped cilantro
Mix lime, chili flakes, rice wine vinegar, and EVOO; season with Salt/Pepper and whisk to combine
Combine the veggies in a large bowl; add dressing and let sit for 15 mins stirring 2-3 times before serving!
this make 4 servings; I doubled it for today and it looks like I have plenty for our crowd this afternoon.

DANA--MEL didn't answer, so I will..lol...To me, jicama tastes like a raw potato...but it tastes kinda sweet too...and guilt free!!! I like to slice them up and dip in salsa, or just salt 'em and chew, chew, chew. They are very filling-lots of fiber.
