Yummy low carb dinner
OK this is a Debbi approved dinner. Jeff not so much.
Garlic Parmesan Chicken
8 4oz pieces of skinless, boneless chicken
3 tbsp minced garlic
2 tsp garlic salt
3/4 c finely shredded parmesan cheese
1 tsp dried parsley
Preheat oven to 350. Spray a pan with cooking spray. Pound chicken to 1/4" thickness. Place on pan and spread 1 tsp minced garlic on one side of each piece, then sprinkle lightly with garlic salt. Cover with foil and bake for 5 min. Turn chicken over and sprinkle each piece with 1 1/2 tbsp Parmesan cheese and top with a pinch of parsley. Do not put foil back on. Bake for an additional 5 to 7 min or until chicken is no longer pink.

Savory Zucchini
1 medium onion, chopped
1/2 c fat free italian salad dressing
3 medium zucchini, cut into 1/4" slices then halved
1 1/2 tbsp minced garlic
1/2 c finely chopped extra lean ham
Cook the onion with the salad dressing over medium-low for 4 to 5 min with a lid on, stirring occasionally. Stir in the zucchini, garlic and ham until well mixed. Cover and cook an additonal 4 to 5 min, stirring occasionally. Serve hot.
