Chocolate Ricotta Mousse Recipe
I made this for dessert tonight. It was absolutely delicious. It's so good that I'm going to make it next time I have guests for dinner. I would serve it to anyone. It doesn't taste like a "healthy" recipe.
Chocolate Ricotta Mousse
(makes 10 1/4 cup servings)
6 ounces dark chocolate, chopped (I used dark chocolate chips)
1 container (15 oz.) part-skim ricotta cheese
1/4 cup fat free half and half
1/2 teaspoon vanilla extract
Raspberries or strawberries (optional)

1 container (15 oz.) part-skim ricotta cheese
1/4 cup fat free half and half
1/2 teaspoon vanilla extract

Place chopped chocolate in a 2-cup glass measure or small microwave-safe bowl. Microwave, uncovered, on 70% power (medium-high) for 1 minute; stir. Microwave on 70% power for 1 to 2 minutes more, or until chocolate is melted, stirring every 15 seconds.
