Protein Bars - Just Made These
DH bought regular 8th Continent soy instead of light and I didn't have low fat peanut butter here today, BUT I love the taste and I'm sure I can make them with less fat next time. Now I'm waiting for them to chill up for a snack later.
Protein Bars
2 scoops Optimum Nutrition Double Rich Chocolate
1 scoop Optimum Nutrition Chocolate Mint
2 cups Old Fashioned Oats
3 packets Splenda ¼ tsp cinnamon
½ cup 8th Continent Soy Milk
1/3 cup crunch peanut butter
4 oz Low Fat Cream Cheese
Allow cream cheese to soften. Mix all ingredients together until thoroughly mixed. Coat 8 x 8 pan with Pam, pour mixture into pan, level out and refrigerate for at least one hour.
Cut into 10 equal sizes.

Okay...just saw this post...how do they TASTE? rt. now if I'm gonna eat high pro lo carb...I want it tasty! most of the store bought protein bars are sawdust with flavoring added. I do like Fiber One, but they're not high protein. I like Power Crunch, but don't have access to them here; HEB has them sometimes.

OMG they are ALMOST to good. I'm going to have to freeze these and be sure I don't make them a habit. I will try the low-fat peanut butter and the light 8th Continent milk to make the fat content a little lower. The light cream cheese and peanuts in the crunchy peanut butter I think are the key to making these so good.

Steph it should work fine. I use the soy milk which is much better nutritionally than even 1% milk. I like the Hoods Countdown too, but it sometimes makes my nauseated where the soy milk doesn't. I wish we had an HEB here because I really liked the Mootopia when we lived in Texas.

I would use the Mootopia. I can't do soy. too much sugar for me and it's just not for me. I don't have carb countdown here anymore either. I would love to use the Mootopia chocolate but the sugar and fat are pretty high. but it's sure good!

I'm making these today and going to try them out for work this week. When you freeze them, what do you use? ziplocks, small containers, etc. How long do you let them thaw out?
My problem is that my students don't have lunch until 1 p.m. and I need to each a good snack but I can't heat up anything or go to a refrigerator because I can't leave the kids. I was thinking of freezing these and putting them in my insulated lunch kit in the morning and maybe it would be thawed by 10:30 or so for a snack?
