One rotissurie chicken-shredded
1 can of Rotel
1 pkg of shredded monterey jack cheese divided
2 cups Brown Rice (cooked)
Combine rice, rotel, chicken and 1/2 of the cheese~spoon into a 7x11 inch baking dish; I spray a tad of pam-cook covered at 325 for 30 minutes; Uncover, sprinkle with remaining cheese return to oven for about 5 minutes.
You can add black olives too; but my peeps do not eat olives. I know rice is not the best choice but it was what hubby picked for dinner..lol
