need easy lunch ideas

Okay I am a teacher and I will be starting back to school soon.  I am 2 months out and I still can't handle breads or pastas but I need some easy ideas that I can take for lunch. Anything you guys got will be great.

Phyllis's standby is turkey and cheese rollups.  Works great.  I liked that.  Also I eat a lot of omelets.  I don't mind having one twice a day.

Have to agree with George...rolled up thinly sliced deli meats and/or cheeses works out great.  I buy the Oscar Mayer deli sliced turkey (in those longer plastic containers with the peel-back lid...I get mine at Sam's since my three girls use the same turkey in their school lunches) as well as the Boar's Head Deluxe Ham.  I have them slice it super-thin...not shaved, but basically just thick enough that it holds it's full piece shape when they slice it.  I think the slice at Kroger is like a bit less than "1".  It rolls up GREAT!  Perfect protein.  If you like cottage cheese, that is an option too.  Amazing how much protein is in just a 1/2 cup!  You can roll up those meats/cheese and then pop in a container with an ice pack and you'll be good to go!  Definitely stay away from the pastas, rices, etc. as I swear, they just blow up in your belly like a balloon and you will feel MISERABLE!

Hi Tonya,  I had the same problem (and I work at a school too) after I had WLS.  I couldn't take a diet entree because they are filled with bread, pasta, and rice.... and I don't like deli meat,  so I made my own lunches  using recipes from http://theworldaccordingtoeggface.blogspot.com/  She has a lot of wonderful recipes and I have especially found her casseroles to work well for me.   About once a month or so I will make 3-5 recipes and freeze them in small containers.   Then in the morning I just take one out of the freezer and pop it in the microwave at lunch time.  Hope this helps.

Yogart,  Cottage Cheese.......................pack it in a lunch pail with an ICE BLOCK...............
couple of ATkin Shakes.............................cheese sticks?    I love the Sargentino Mont Jack Colby Jack cheese............AWESOME BLOSSOM !!
For the first 6 months or so...............I ate alot of HOney Turkey, or smoked turkey and the SAra Lee Co-Jack (get it at the deli at Walmart) cheese - rolled up individually..............YUMMEO !!
Now I do the HOney  Ham too...................with cheese. 
Apples and peanut butter is really good too.............peel that skin off and you'll be fine !!

I take leftovers from dinner the night before plus I freeze stuff in tiny containers.  Here's a few suggestions:

One meatball with spaghetti sauce and cheese sprinkled over the top
Chicken, tuna or egg salad and crackers
Pot roast carrots, meat (cut up really tiny) and gravy
Chili
Bean burrito (just eat the insides)
There are some frozen entrees that aren't too bad, just look at the package for the nutritional content
Shrimp/coctail sauce

I do a lot of freezing in small containers, too.  I think it's Glad that makes ones that are 1 cup and also 1/2 cup.  I put leftovers or make entrees and freeze them.  

Taco soup, chili freeze well.  You can make chicken enchilada "guts" and freeze.  Tastes the same.

Tuna and chicken salad work well.

Deviled Eggs

Salad w/ lunch meat if you can handle lettuce

Atkins makes great shakes to grab and go.

If you spend time right now making some entrees and freezing, you will be so glad later on.

I'm a diagnostician at our local school, so I too know it's grab and go...I do have an office and my own fridge and microwave, so that helps!

A couple of additional thoughts, some of these are easier than others:

meatloaf (make 1/2 turkey, 1/2 low fat beef) is great and freezes very well.  Pair that with a veggie and you've got a great lunch/dinner.  Great recipie on the box for Beefy Onion Soup Mix in the grocery store

homemade chicken & dumplings: take a pre-cooked rotissere chicken, pull meat only off it, add to a pot with chicken broth, about 2 cups water added, baby carrots, celery or celery flakes, onion and some seasoning; coo****il veggies are soft.  For Dumplings I use very thinly sliced tortillas, about 1 inch square and put them in to boil too.   Lastly, add cream of chicken or cream of celery soup and it's wonderful.  Great for lunch or dinner and you can freeze left overs

Crock Pot post roast with veggies - again, freezes well

Pressure cooked chicken breasts - out of this world!!  Very tender & juicy, plus can freeze them for later

Smoked bonelss turkey breast (if you have a smoker) - outstanding and can do lot's with the meat!

John made roll-ups last night but instead of regular cheese he used cream cheese. My favorite was the turkey with garden vegetable cream cheese. YUMMY. I brought the leftovers for my lunch today! lol

Thank you for all of your great ideas! I will definetly try some of those in the up coming weeks before school starts so that I am not trying anything new while at school.  It seems like anytime I try something new it doesn't sit well.  Is there any good breakfast ideas that don't include eggs? I am getting a little tired of eggs for breakfast.
