I found the following recipes on the WLS channel on the internet today.  I went and bought the stuff to fix the first 2 recipes and they were so good.  You have to try them.  I grilled the chicken on my George Foreman grill so they stay moist. 

Grilled Chicken Pecan Salad   1 lb chicken breast 1 cup lite mayo 1/2 cup chopped green onions 1/8 tsp paprika 1/2 cup chopped pecans 1/2 red bell pepper chopped lemon juice from 1 lemon salt and pepper ***Lightly season the chicken breasts with salt,pepper, and paprika.  Grill until cooked through.  Dice the grilled chicken into 1/2 inch cubes and place chicken in a mixing bowl.  Dice red bell pepper and add to the bowl.  Chop green onions into small pieces and add to bowl.  Add lemon juice, lite mayo, and chopped pecans.  Stir until mixed together well.  Serve chilled with whole wheat crackers for a light meal.    ENJOY!!!!!      Spinach Salad with Strawberry Vinaigrette   4 C Fresh Spinach 2 C Fresh Strawberries 1/2 C Gorgonzola Cheese Crumbles 1/4 to 1/2 red onion 1/2 C walnuts Chopped 1/2 Red Bell Pepper 2 packets Splenda 2 Tbsp salad oil juice from 1 lemon salt and pepper to taste   To make the vinaigrette, combine strawberries, canola oil, Splenda, salt,pepper, lemon juice in a mixing bowl.  Using a whisk, somewhat mash strawberries to get some juice flowing.  Let stand 3 to 4 minutes.  Place washed spinach into bowl of vinaigrette and toss.  Serve into individual bowls.  Slice red onion into rings and cut red bell pepper into julienne strips.  Garnish each salad with red onion, red bell pepper strips walnuts, and gorgonzola cheese on top.  Enjoy!!!!! (This is a refreshing change from other ho-hum salads.)     Watermelon Salad   4 cups cubed watermelon 1/2 cup green onions 2 kiwis 1 cup strawberries 2 sprigs of fresh mint 2 tbsp salad oil 2 tbsp raspberry vinegar   Dice watermelon into 1 inch cubes and place into large mixing bowl.  Add diced green onions and several fresh mint leaves finely chopped.  Add kiwis and strawberries sliced into bite size pieces.  Pour canola oil and raspberry vinegar into mixing bowl.  Add a pinch of salt and mix all ingredients together with a large spoon.  Serve room temperature or chilled.  (Don't cut up watermelon too far in advance.  You will have a lot of juice settle in the bottom of bowl) ENJOY!!!!!!   WE HAVE TRIED THE FIRST TWO SALADS AND THEY WERE GREAT.  THE SPINACH SALAD WOULD GO GREAT WITH BAKED FISH.    HOPE YOU ENJOY THESE RECIPES.  THEY ARE HEALTHY AND LOW FAT.

Thanks for telling me Deborah, I had missed this.  I am a recipe collector, lol; that's what I did most of the afternoon yesterday is look for and save recipes for future use.

I fixed the first 2 recipes yesterday and they both were so good.  We had the Chicken salad with wheat crackers for lunch.  It was soooooo good.  Then we had the Spinach salad with our dinner and it was delicious. 
We haven't tried the Watermelon Salad recipe yet, but it also sounds good.  All of them are perfect for the weather we are having now.
