Bon Appetit Tuesday - Share a Recipe
It's been so hot that I've been limiting my cooking to recipes that use the George Foreman Grill, the Crock Pot or the Microwave.
I made this for dinner Sunday night. DH loved it and it was so yummy I had the leftovers for lunch yesterday.
Pepper Jack Chicken
4 boneless, skinless chicken breasts
1 sweet onion, diced
1 can mushroom pieces
olive oil
Worcestershire sauce
soy sauce
spice rub for grilling (any flavor)
8 ounces grated jalapeno jack cheese
4 ounces of grated sharp cheddar
Marinate chicken breasts for at least 10 minutes in a mixture of soy sauce, Worcestershire sauce and grill spice rub (any flavor rub will work).
Saute onion in a little olive oil until tender, then stir in one can of mushroom pieces (drained).
While you saute the onions, cook the chicken on the George Foreman Grill until done (about 5 minutes).
Put the cooked chicken breasts in a microwavable casserole and pour the vegetable mixture on top. Top with 8 ounces of grated jalapeno jack cheese and 4 ounces of grated sharp cheddar. Microwave about 2 minutes until cheese is melted.
I served these with sauteed yellow squash, zucchini and cherry tomatoes. Quick and easy.
