July Journey Sunday

How was your 4th of July Journey?  I know I ate more dessert than I should have, but was pretty good other than that.  That fried catfish sure was good, but I also had layered salad, 3 pieces of fried eggplant, some potato casserole, few bites of a rib, and some blueberry and buttermilk pie (not all at once)

Today's map:
lots of liquids
at least 2 protein drinks
unsure for lunch...may eat out after church
better thaw something for dinner...thinking my "map" has a few flaws right now!

What's your plan?

Karla

I had already warned you guys on yesterday that I would indulge a little.  The band did not want to comply at first.  But after a 15 minute hiatus I was okay.  I had a little taste of the following:
1/4 cup crawfish fettucine, 2 bites of rice dressing, 3 grilled drummettes, slice of italian creme cake, slice of lemon pie, and loads of fruit punch.  Once I started drinking the punch, I could not stop.  Today I will get back to the good carb category.  I have slow cooked a brisket all night and I am going to make some type of peas/beans and corn.  I will get my water in too because I need to counteract all of the deliciou*****h my sister made me drink yesterday.

We went to the casino instead of cooking out yesterday but I still ate like crap.  I had a Sonic Ham/egg/cheese toaster for breakfast, 2 slices of yucky Sam's cheese pizza for lunch and a grilled hotdog with baked beans for dinner.

Today: protein drink (done) for breakfast.  3/4 Egg salad sandwich with 10 potato chips for lunch. (done).  Dinner: hotdog/beans/corn.  Not great choices but OK for maintaining.  I'm back in the midle of my range again.

Hi Everyone,

Well, I somehow managed to do much better with my food choices yesterday.  I also logged all my food intake.  It was hard with so much food everywhere.

Today's Plan is...
B'fast - turkey, egg white, cheese & almonds
Lunch - tilapia w/ pico de gallo
Dinner - ??? grilled chicken salad (maybe)
Water...Water....& Water - all day!

I do not have a problem with July 4 overindulgence.  July 4 is the anniversary of my dad's death and therefore never a celebratory occasion.  So I spent yesterday just hanging around the house.  I ate 2 eggs, 3 strips bacon, and one slice toast for breakfast; a spoonful of peanut butter for lunch; and a Chuy's Lite Plate for dinner.  The worst things I did were eating three chocolate-covered banana chips as a snack, throwing down some chips and salsa at Chuy's, and licking the bowl after making coconut cookies for LaDonna.

Hmmm ... now that I have fessed up to it all, that does look like rather a lot of sugar.  Need to work on that.  That's what this thread is for, right?

As for today:  Sunday is my one "day off" from protein shakes and working out.  LaDonna always works a 7a-7p shift on Sundays, so I'm left to my own devices all day.  The eating gets pretty random on Sundays ...

Breakfast:  About 10 strawberries, while I was washing the 2 lbs. of them I bought at Kroger the other day for $2 (such a deal).

Lunch:  A small handful of trail mix, filched from the bulk food section at Tom Thumb (hey, I was about to pass out by then!  It was larceny, but under emergency conditions).

Dinner:  I'm making an elaborate new meatloaf recipe involving ground chuck, Italian sausage, and about 20 other ingredients.  Will serve it with fresh corn on the cob (which I know is crap, nutritionally, but LaDonna requested it) and a green salad with pears, pine nuts, feta cheese, and homemade citrus vinaigrette.

Here's where I got the recipe:

http://simplyrecipes.com/recipes/classic_meatloaf/

I'll let you know how it turns out.  You just never know with meatloaf ...

I know I'm going to be highly annoyed if it turns out to be gross after all that chopping, so please join me in prayer for a good result.

The verdict re: the elaborate meatloaf recipe is in:

It was not gross, it was decent, but it wasn't worth all the hassle and chopping.  The flavor of the Italian sausage got lost entirely.  I don't recommend it.

It was not as good as my mom's old standby meatloaf recipe, which is:

Combine 2 lbs. ground chuck or sirloin with 1 packet dry onion soup mix.  Pat into loaf pan and top with 1 can undiluted cream of mushroom soup.  Bake at 350 for 1-1/4 hours or until done (160 degrees internal temp).  Yum.
