Morning Danni!  I've been up since 6 now on my 2nd cup of coffee.

We had a great time yesteday with family.  There were 21 people at my house, with way to much food.....I didn't do horrible but it could of been better.  We cooked to feed an army, there were 7 teenage boys and we thought they would eat allot, lol; which they did but we still had to much food.  I sent as much as a could home with people, the rest is going to work tomorrow to feed my coworkers.  Popped (the kids) fireworks last night then I crashed, long day.

I'm going to get the boys up in a bit to head to MIL, I need to pick more figs and okra and this afternoon I'll be canning again.  Busy weekend, back to work tomorrow.

Debbi's mom in law semt sent us home with several HUGE chunks of cake - weddng and chocolate - let the boys have one resonable (they cut I hid so who knows how well that worked out) peice of each last night then took it over to the college kids that live next door - I am going to miss them - they will eat anything I cook LOL makes a great way to dispose of leftovers that are too good to throw away (yes I know I have issues ) but I don't need to be eating and they are so apricitive, it is totally a win win situation

Dana ...how do ya do the figs ? what do you make with then ? lol.. we have 4 trees and what a mess they make .hubby said he is cutting them down ...

*cough, cough* Brenda, I can them with sugar, oops not a friendly WLS thing I know but I don't dump and I rarely eat them.  What I do is make Fig Cakes, that are AMAZINGLY delicious.  I made some for the Teachers Appreciation Day last year at the boys school and someone actually called me for the recipe, some of the teachers didn't get any because they ate it so fast, haha.  My mother-in-law and coworkers almost beg me to make it.

I also put the figs in a food processer, add strawberry jello and make mock Strawberry Perserves. 

I am going to try on the next batch to make them with 1/2 sugar, 1/2 splenda not sure how it will work though since Splenda doesn't turn into syrup like sugar does.

Tell your hubby to put an add in the paper or signs out, you may be able to sell the figs.  Here in Louisiana, people or BEGGING to buy them, since Hurricane Rita and Ike destroyed so much many lost their fig trees.

MY GRANNY use ta make fig cookies with walnuts or pecans in them ,man that was one good cookie .lol. hell i couldn't eat just one .would you share your Fig Cake recipe ? would love to make my mom one .

Brenda, I'll get the recipe later and post it or PM you with it (probably PM I don't want someone do dump reading it, lmao).  First things first though, you have to can those figs you have on your tree, the recipe calls for perserved figs.  I'll tell you how to do that too in the PM.

I spent a wonderful afternoon/evening at my sister's home in Lake Charles.  The food was delicious, the laughter was hearty, the games were fun and the fireworks were beautiful. I hope everyone else had a great time for the 4th too.  Today,  I must act like I have had surgery and rest.  I am scheduled for training in Alexandria tomorrow and I am really not looking forward to another ride.  I seem to find every bump/hole in the road
