Thanks for the sympathy, sugar sista.  I got the recipe from foodnetwork.com.  It was sort of a pain to make, but so delicious, it was worth every minute.  Low-carb, it's NOT.

Potato, Tomato, Corn and Basil Salad
  • 1 pound baby red potatoes, scrubbed
  • 5 medium ears of corn (about 3 pounds)
  • 1 pint grape tomatoes, halved lengthwise
  • 1 small red onion, peeled and sliced thinly (about 1/2 to 3/4 cup)
  • 1 large bunch fresh basil, rinsed, dried, and leaves picked
  • 1/4 cup extra-virgin olive oil
  • 2 large lemons, juiced
  • 1 teaspoon kosher salt
  • About 15 grinds freshly ground black pepper

Place the potatoes in a large pot of salted water and bring to boil. Coo****il just fork tender, about 15 minutes. Fish out the potatoes with a spider or slotted spoon and place them in a bowl of ice cold water to stop them from cooking.

Shuck the corn and break each ear in half. Cook in the same boiling water for 5 to 7 minutes until tender but not soft. Remove the cooled potatoes to a dish-cloth to drain. Immerse corn in the same ice bath until cool. Cut each potato into quarters and place in a large bowl.

Remove corn from water and also let drain. Use a chef's knife to cut the kernels off each ear. Add kernels to bowl. Add grape tomatoes, onion, and whole basil leaves. Add olive oil and lemon juice and toss gently to combine. Season, to taste, with salt and pepper. Serve immediately.

I am also a sugar and carb addict who loves to bake.  Three things I have changed :
I bake less only once a week or every two weeks
I bake in those mini muffin pans.  No matter what I make I cook some in that pan.  So I always have a very small portion ready for me and regular for him.  I also use my "clean eating" recipes to minimize the bad stuff and emphasize the good stuff.
Lastly is a pain but it's my agreement with myself.  When I eat anything I have to be seated at a table and my food has to be cut or torn up.  This makes me be serious about what I am eating bc that's a lot of effort and makes me chew it up good and really taste the flavor.

Sitting at the table is especially helpful when dealing with treats and snacks.  I used to grab stuff and pop it in my mouth as I walked by.  But now I stop get a plate and a knife and go sit at the table, cut it all up and then eat it.  Sometimes just the thought of doing all that for a mini muffin will turn me off to eating one, lol.

I had to slow down the baking to meet my own needs but I didn't want to punish my skinny husband.  So now when I bake it's more of a treat bc it happens less often and he gets really excited and he thinks between bakings and comes up with a craving item for the next baking session.  It's like a new game we play.
