Mexican Meatloaf [special request from my twinkie!]

DD #1 and I made this before and tonite decided that next time instead of the spices as listed below, we will try a package of "taco seasoning" and see if that kicks it up a notch!!

Mexican Meatloaf from WW - serves 6

Cooking spray
1/2 # extra lean grd beef
1/2 # lean ground turkey breast
2 large egg whites
2 oz dry cornbread stuffing mix [about 1 cup]
1 med chopped onion
1/2 tsp chili powder
1/4 tsp cumin powder
4 oz can green chili peppers, diced
8 oz can enchilada sauce

Preheat oven to 375 degrees. Coat a pan with cooking spray [we used this cute muffin/mini cake pan that has 6 cups in it]
In a large bowl, mix beef, turkey, egg whites, stuffing mix, onion, chili powder, cumin, chilies and 1/2 of the enchilada sauce.
Mix well and either put into in oval shape in the prepped broiler pan or into the muffin/mini cake pan. Cook for 1 hour. Top with other 1/2 of the enchilada sauce and bake 5 minutes more.

We added some garlic powder, salt and pepper and a bit more chili powder than called for. We also "garnished" with sour cream and picante sauce.

I am not generally a big meatloaf fan but this one is pretty good. We make it in the little "mini cake" pan with the 6 openings and it's just right to put into a plasticware container and take to work,

Enjoy and don't be bashful about changin anything up that doesn't sound right :-)

Mmmm that sounds really DELICIOUS!!! Guess I will be making this sometime this week. Just made a pot of beans and I am sure this meatloaf will go good with it!!
