Shepherd's Pie recipe
DD#1 and I are cooking for the week. I'll post the Mexican Meatloaf one in a bit. Here is the Shepherd's Pie recipe. It's for 4 servings.
4 tsp canola oil
12 oz beef
1 cup onions
4 cups veggies
2 cups Italian style tomatoes - diced
4 potatoes - microwave cooked, sliced
3/4 cup milk
1 cup cheese - grated
Preheat oven to 400 degrees. Heat skillet over med heat. Add oil. Brown meat, breaking up into small chunks. Add onion, veggies and tomatoes. Cook 5 minutes. Turn mixture into an oven proof dish. Mash potat with milk in a small bowl; cover meat mixture with potatoes. sprinkle with cheese. Bake 15-20 minutes.
We cooked the stuff in the oven about 15 minutes and put cheese on the last 5-10 minutes. We also added salt, pepper and garlic powder!!!
